Homemade Oreo Cookies

Sweet Buttercream Filling:
3/4
cup
Butter
(softened)
1 1/2
cups
Powdered Sugar
1
teaspoon
Vanilla
Instructions
Heat oven to 350 degrees.
In a large bowl, cream together butter and sugar until light and fluffy -- about 4 minutes.
Add egg and vanilla and beat until creamy. Scrape down the sides of the bowl.
Add cocoa, flour, baking soda, baking powder, and salt.
Using a scoop, drop 12-16 cookies onto parchment paper or Silpat lined cookie sheet. Sprinkle with sugar.
Bake for 13-16 minutes.
Remove from oven and let cool.
Sweet Vanilla Cream Filling:
In a large mixing bowl, cream butter for 2 minutes. Add powdered sugar and whip until light and fluffy, about 2 minutes longer. Add vanilla.
Once cookies have cooled, spread sweet buttercream filling on bottom of the cookie. Top with second cookie.
